1 cup chopped onion
1 cup chopped celery
1 cup chopped carrot
1/2 cup English peas
2 cups chicken broth
1 cup half and half (or milk)
1/3 cup melted oleo
1 teaspoon salt
1/2 cup all purpose flour
1/4 teaspoon pepper
4 cups chopped cooked chicken

Directions:
Directions:
Saute onion, celery, carrots and peas in butter for 10 minutes. Add flour to sautéed mixture, stirring well. Cook 1 minute stirring constantly. Combine broth and half and half; gradually stir in sautéed mixture. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper. Add chicken, stirring well. Pour into shallow baking dish and top with pastry (pie crust). Bake at 400º for 40 minutes or until crust is brown.
