1 large package of fresh spinach.
1 1/2 - 2 c fresh mushrooms, sliced.
2 large eggs, hard boiled, crumbled
5 slices bacon, fried hard, crumbled

For the dressing:
2 T. dry white wine
1 T. wine vinegar
1 tsp. imported Soy Sauce
1/2 tsp. salt
1 tsp. sugar
1/2 tsp. pepper
1/2 tsp. dry mustard
1/2 tsp. curry powder
1 clove garlic, minced
2/3 c. salad oil

Directions:

1.) For the dressing, mix all ingredients except the oil, when all spices have dissolved whisk in the salad oil by pouring a thin stream into the mixture forming a light emulsion.
2.) Toss the dressing with the spinach and mushrooms, add the hard boiled eggs and bacon to the top of the salad and serve.

Jerry was a very good friend of mine that left this life too soon. When I first met Jerry he was an electronics buyer at RCA in Bloomington, IN. He later was the Purchasing Agent for Essex Controls in Converse, IN. We loved to eat, drink and play golf.
