8 unpeeled potatoes, medium dice
1 lb. grated cheddar cheese
1 c. mayonnaise
1/2 c. chopped onion
1/2 lb. cooked bacon, crumbled
1/3 c. sliced stuff olives
Salt & Pepper to taste
Directions:
Directions:
Boil potatoes until just tender. Then combine drained potatoes with cheddar cheese, mayonnaise and chopped onion. Mix until you reach the consistency of potato salad, add additional mayonnaise if necessary. Place into a 9" X 11" casserole dish and top with the crumbled bacon and olives.

Bake at 325ºF for 1 hour.

Don and Velda Painter were very good friends of mine and as a single guy I would eat with them often. Don loved jazz and big band music as did I and Velda was and excellent cook and really loved this past time. Just as a closing note, Don was the grandfather of the current Purdue University men's basketball coach, Matt Painter.
