4 pounds fresh salmon fillets
Olive oil
Kosher salt
Black pepper
3/4 pound haricot verts, stems removed, blanched
2 pounds cooked small Yukon Gold potatoes, thinly sliced
2 pounds ripe tomatoes, cut in wedges
8 hard boiled eggs, peeled, cut in half
1/2 pound Kalamata black olives, pitted
1 bunch arugula
1 can anchovies, drained

Vinaigrette:
3 tablespoons champagne vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon pepper
10 tablespoons virgin olive oil

Directions:
Directions:
Grill the salmon by brushing with oil, salt and pepper in hot grill pan quickly - 5 minutes per side. Remove and cover tightly with aluminum foil. Let stand 15 minutes.

Arrange vegetables on a large platter add rested salmon. Using plastic wrap, cover and refrigerate until ready to serve.

Before serving drizzle vinaigrette over salmon and rest of platter lightly. Serve the balance of the dressing “on the side”.
