3 T. Butter
1 medium onion, chopped
6 carrots, pared and thinly sliced
1 celery stock, thinly sliced
1/2 tsp. basil
1 T. chopped fresh parsley
3 T. flour
5 c. chicken stock, heated
salt and pepper

Directions:
Directions:
Heat butter in large saucepan over medium heat. Add onion, cover and cook 5 min. over low heat. Add carrots, celery, basil and parsley; season well. mix and cook 6 min., partly covered, over medium heat. Mix in flour until well incorporated. Pour chicken stock, correct seasoning and bring to a boil, partly covered. Reduce heat to low and cook soup for 20 min. Pass soup through food mill or puree in blender. Serve hot!
