1 1/2 cups sugar
3 eggs, separated
1 1/2 cups cooked, mashed sweet potatoes
1 teaspoon vanilla
1 stick butter, melted (no substitutions)
1/2 cup evaporated milk
1 9-inch unbaked pie shell

Directions:
Directions:
Pick the smoothest, pinkest sweet potatoes you can find. Boil and peel potatoes and beat them using a mixer to get rid of the strings. Add sugar, vanilla, beaten egg yolks, melted butter, and evaporated milk and beat well. Beat egg whites separately. Fold beaten egg whites into sweet potato mixture. Pour into unbaked pie shell and bake for 1 hour at 350 degrees.
