3 Cups Diced Chicken (I use about 3 breasts)
1 Can Cream of Mushroom Soup undiluted
1 Can Cream of Celery Soup undiluted
1 Cup Chicken Broth (saved from cooking chicken)
1 Medium jar Pimentos, drained and chopped
1 Pkg. Long Grain & Wild Rice
(I use Uncle Bens Long Grain & Wild Rice), 6 Oz Pkg.
1 Small can sliced Water Chestnuts, chopped into quarters.
1 Cup chopped Celery (optional) I use 2 stalks
1 Small chopped onion
2 Cans French Style Green Beans, drained (I used 1 French and 1 regular)
½ Cup Mayonnaise
1 Can French Fried Onions (optional)

Directions:
Cook Rice according to package directions. Mix with remaining ingredients and place in casserole dish. Bake in 350 Degree oven for25-30 minutes or until hot and bubbling. It took about 50 minutes. Top with Fried Onions during the last 5 minutes of cooking if you use them. Be sure it is heated thoroughly. Can be made in advance and refrigerated. Do not add mayonnaise until ready to cook if you do this. Extend cooking time to 45 to 55 minutes to be sure it is cooked. Freezes well.
