1/3 cup soy sauce
1/4 cup white wine vinegar
2 Tbsp chili sauce
2 Tbsp sugar
2 Tbsp sesame oil
1" fresh ginger peeled, finely chopped
4 cloves garlic, minced
2 tsp chili flakes (or less)
fresh ground pepper
1/4 cup vegetable oil (or olive oil)
spaghettini or vermicelli
grated carrots
green onion, thinly sliced

In a medium bowl, whisk soy sauce with vinegar, chili sauce, ginger, garlic, chili flakes and pepper. Whisk in oil gradually. Refrigerate until ready to use. (Note: it gets better if made the day before and can sit in the fridge for a while.) Whisk again just before using. Toss with cooked pasta, carrots and green onion. This salad is always a big hit at potlucks and barbeques. I never have leftovers to bring home! Serves 6.
