1/2 c. margarine
1 c. sugar
2 eggs
3 bananas, crushed
2 c. flour
1 t. baking soda
1/2 c. milk mixed w/ 1 T. apple cider vinegar (or 1/2 c. buttermilk)



Optional:
1/2 c. chopped nuts
1 c. semi-sweet chocolate chips

Directions:

Cream margarine with sugar. Add eggs and mix. Add crushed bananas and mix again. Sift flour with baking soda and mix in. Gradually mix in milk mixture or buttermilk. At this time bread can remain plain banana, or add optional ingredients. Grease 1 large loaf pan or 2 medium pans or 3 small pans. Bake at 350º. 2 med. pans, 45-50 minutes; 25-30 minutes for small pans, and large pan at 325º for 1 hour. (In all cases, toothpick should come out clean when inserted in middle of loaf.)
