1/3 c. semi-sweet mint chocolate chips
1/2 c. (4 oz.) 1/3 less fat cream cheese, softened
1 (16 oz) pkg powdered sugar, sifted
1/4 c. unsweetened cocoa
1/4 c. sifted powdered sugar
2 Tbsp semi-sweet mint chocolate chips

1. Place 1/3 c. chocolate chips in a microwave safe bowl; microwave on HIGH for 1 minute or until almost melted. Stir until smooth. Cool.

2. Add cream cheese to melted chips; beat with a mixer at medium speed until smooth. Add package of sifted powdered sugar, 1 cup at a time, beating until well blended (mixture will be stiff and dry).

3. Press mixture into a 6-inch square on plastic wrap; cover with additional plastic wrap. Chill for at least 1 hour.

4. Remove top sheet of plastic wrap; cut mixture into 48 squares. Shape each square into a ball; place on wax paper. Roll half of balls in cocoa; roll remaining balls in 1/4 cup powdered sugar.

5. Place 2 Tbsp of chocolate chips in a small heavy-duty zip-top plastic bag; seal bag, and microwave at HIGH for 1 minute or until softened. Knead bag until smooth. Snip a tiny hole in the corner and drizzle over the cocoa balls.

Serve immediately or chill; bring to room temperature before serving.
