1 med. onion
3 or 4 celery ribs
1 green pepper
1 red pepper
2 minced garlic cloves
2 (16 oz) pkg frozen & peeled crawfish tail thawed
2 c. cooked long-grain rice
1/4 c. butter, cut into pieces
1 sm. bunch of green onions
2 T. creole seasoning
1/2 tsp. pepper

Directions:
Directions:
Chop first 4 ingredients. Cook vegs & garlic in butter. Stir in crawfish tails and next 5 ingredients; cook 3 min. or until thoroughly heated. Spoon mixture into lightly greased 13x9 baking dish. Bake @ 350º for 25 to 30 min. or till lightly brown.
