yellow corn meal
sugar
baking powder
salt
eggs
milk
corn oil
shredded cheddar
canned green chilies

Mix: 1 c. plain flour, 1 c. yellow corn meal, 2 tbsp. sugar, 1 tbsp. baking powder, 1/2 tsp. salt, 2 eggs, 1 c. milk, 1/4 c. corn oil, 1 c. shredded cheddar, 4 oz. can green chilies
Preheat iron skillet in 425º oven; cover bottom of skillet with corn oil (about 1/8 c. oil).
Pour batter into hot skillet.
Bake 20 to 25 minutes.
