1 lb. fresh asparagus
1 small red bell pepper, cut into thin strips
1 small onion, cut into thin wedges
1 Tbs. olive oil
1/4 tsp. salt
1/4 tsp. black pepper
1/4 cup shredded gruyere

Directions:
Directions:
1. Preheat oven to 400. Snap off ends of asparagus. On a cookie sheet, combine the vegetables, then drizzle with oil and toss to coat. Spread in a single layer and sprinkled with salt and pepper.

2. Roast about 20 minutes or til crisp-tender. Sprinkle with cheese.
