2 Cups Long Grain Rice (cooked and kept warm)
800g Lamb, cut into strips
3 Tablespoons Vegetable Oil
1 Medium Onion sliced
4 Teaspoons Crushed Garlic
4 Tablespoons Curry Powder
120g Snow Peas, trimmed and sliced
120g Green Beans, Trimmed and sliced
2 Cups Vegetable Stock or Water
Salt and Pepper to Taste

1. Heat oil in a saucepan, add Lamb and brown slightly.
2. Add onion, garlic, ginger and curry powder and gently cook for 2-3 minutes.
3. Pour in the stock.
4. Simmer until Lamb is soft then add green beans and after 2 minutes add snow peas.
5. Cook for a further 2 minutes and add cooked rice, stir to mix, Serve.
