16 oz. cheese tortellini
1 green pepper, thinly sliced
1 red pepper, thinly sliced
1 small red onion, julienned
½ cup sliced black olives
½ cup crumbled feta cheese
1 boneless chicken breast half, cooked & sliced thinly
¼ cup olive oil
2 tsp. grated lemon zest
¼ cup lemon juice
2 Tbs. ground walnuts
1 Tbs. honey

Directions:

1. Cook pasta in large pot of boiling salted water until al dente. Drainand cool under cold water. Refrigerate until well chilled.
2. Make dressing. In a small bowl combine oil, lemon zest and juice, walnuts and honey. Refrigerate until chilled.
3. In a salad bowl, combine pasta, peppers, onion, olives and chicken. Pour dressing and feta cheese over. Toss and serve.
