12 oz. wide egg noodles
2 Tbs. olive oil
1 ½ lbs. ground beef
¼ cup chopped bell peppers
½ large onion, chopped
3 cloves garlic, minced
24 oz. tomato sauce
1 Tbs. sugar
1 tsp. Italian seasoning
¼ tsp. salt
¼ tsp pepper
1 cup cottage cheese
1 8 oz. pkg. cream cheese, softened
½ cup sour cream or nonfat plain yogurt
½ cup Parmesan cheese
¼ tsp. salt
¼ tsp. garlic granules
¼ tsp. pepper
1 cup shredded cheddar cheese

Directions:

1. Cook noodles til al dente. Drain and toss with olive oil so they don’t stick.
2. In a large skillet over medium heat, cook beef, peppers, onion and garlic til beef is browned. Drain fat and add tomato sauce, sugar, and seasonings. Stir to combine. Gently stir in noodles
3. In a medium bowl, combine cottage cheese, cream cheese, sour cream, Parmesan, half of the scallions and remaining salt, granulated garlic and pepper.
4. Layer half of noodle mixture in a greased 9x13 dish. Cover with all of the cheese/sour cream mixture. Top with remaining noodle mix and sprinkle with cheddar and remaining scallions.
5. Bake uncovered at 350 for 35-40 minutes.
