cup mayonnaise
1 Tbs. chicken broth
1 Tbs. soy sauce
1 Tbs. lemon juice
1 tsp. chopped chipotle chilis from a can
1 tsp. brown sugar


1 large head romaine lettuce, torn into bite-sized pieces
2 medium tomatoes, seeded & diced
cup corn kernels
4 Tbs. grated Parmesan cheese

For Dressing:

1. Whisk all ingredients together in a medium bowl until well-blended. Season to taste w/ salt and pepper.

For Salad:

1. Mix lettuce, tomatoes and corn in a large bowl.
2. Add of the dressing and 2 Tbs. of Parmesan. Toss.
3. Determine if more dressing is needed and add to taste.
4. Sprinkle w/ remaining Parmesan before serving.

I use the canned chipotle chilis quite a bit. Most recipes call for only a small amount, so I put the rest in a container and freeze them, and take them out as needed.
