Pork Mixture:
1 (4-lb.) pork loin, center cut
1 lb. dry pinto beans
2 (sm.) or 1 (lg.) can green chiles
4 cloves garlic chopped
2 T. ground sesame seed
3 T. chili powder
1 tsp. ground oregano
1 tsp. salt

Cheese Topping:
1 (2-lb.) pkg. Velveeta cheese
2 cans Ro-Tel tomatoes

Additional Toppings:
Fritos corn chips
shredded lettuce
chopped tomatoes

Directions:
Directions:
Combine all "pork mixture" ingredients in a lg. pot and cover with water. Cook over stove 6-8 hr., breaking up pork as it cooks. It will have the consistency of "pulled pork". Add more seasoning/water as needed while cooking. Prior to Serving: Combine Velveeta and Ro-Tel, melt in microwave or on the stove. Keep hot for serving. To Serve: Place Fritos in each bowl, then layer with pork, cheese, then top with shredded lettuce and chopped tomatoes.
