6 russet potatoes, peeled and each cut into 4 equal pieces
3 tablespoons/45 ml olive oil
Salt and freshly ground black pepper
1 tablespoon/less than 5 g chopped fresh flat leaf parsley

Directions:
Directions:
Preheat the oven to 450°F/230°C. Place a large baking sheet in the oven for 5 minutes or until it is hot. Remove the baking sheet from the oven and drizzle the oil over the hot baking sheet.

Arrange the potatoes in a single layer over the hot baking sheet and sprinkle with salt and pepper. Turn the potatoes to coat with the oil. Bake for 20 minutes. Using tongs, turn the potatoes over.

Continue baking until the potatoes are tender and crispy on all sides, about 20 minutes longer. Transfer the potatoes to a platter. Sprinkle with the parsley and serve.
