1 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp soda
1 3/4 cups crushed cornflake crumbs
2 cups oatmeal
1 cup coconut

Directions:
Directions:
Cream shortening and sugars together. Add eggs and vanilla. Beat well. Add flour and soda to mixture. Beat well. Add cornflake crumbs, oatmeal and coconut. Mix well.

Shape 2/3 of dough into walnut sized balls. Place on greased cookie sheet. Flatten with bottom of glass dipped in flout. Bake at 350, 8-10 minutes.

Shape 1/3 of dough into balls 1/2 of above size. Bake 8 minutes. Cool.

Chocolate Filling. Melt 1-12 oz pkg milk chocolate chips. Add 1 cup of powdered sugar, 2 Tbsp water, and 6 oz soft cream cheese. Beat well. Cool. Spread over larger cookie. Top with small cookie.
