2 lbs. ricotta cheese, 3 c. breadcrumbs, 2 t. chopped parsley, 1 t. ground cloves, 1 c. Romano cheese, 1/2 dozen eggs.

Directions:
Directions:
Mix all ingredients together. With hands, shape into balls, then flatten. Fry in vegetable oil until brown on both sides. Drain on paper towels.

This is a great Lenten Season side dish, served with macaroni and cooked spinach, which was a meatless dinner for the Feast of Saint Joseph on March 19th. My mother served this when Lent was observed quite strongly.
