1 package taco seasoning
1 (28 oz.) can hominy, drained
1 (28 oz.) can green enchilada sauce
1 large onion, chopped
4 cloves garlic, chopped
2 tsp. ground cumin
1 tsp salt
1/2 tsp. pepper
2 1/2 lbs boneless pork loin roast
1 cup cilantro, chopped
3 tbsp. fresh squeezed lime juice (1 lime)
1 (15 oz.) can diced tomatoes

Directions:
Directions:
Mix all ingredients except pork, cilantro and lime juice.

Place pork in slow cooker and spoon hominy mixture over top. Cover and cook on low for 7 to 9 hours or until pork is done.

Remove pork to a cutting board, Stir cilantro and lime into the mixture in the slow cooker. Shred the pork into bite size pieces and add to the cooker.

Heat through and ladle into bowls. Can also put pork into rolls.
