4 (5oz) cod fillets or equivalent
3 tbsp. olive oil
2 tbsp. flour
3 garlic cloves, chopped
3/4 cup frozen peas
1/3 cup parsley
1/2 cup dry white wine
2 packages frozen spinach (can use cooked fresh spinach)
Crumpled feta cheese (optional)

Directions:
Directions:
1. Heat oil in a medium-high skillet until simmering.
2. Salt and pepper fish and dust with flour.
3. Add fish and garlic to the skillet. Cover and cook over medium-high heat until barely golden, about 2 minutes.
4. Meanwhile, cook spinach.
5. Turn fish, add peas, 1/2 of the parsley and wine. Cook, stirring occasionally until almost cooked (about 6 to 8 minutes). Sprinkle with remaining parsley and serve over cooked spinach.
6. Add crumpled feta cheese.
