1/2 cup chopped scallions-from bottom – use green and white section
1/2 cup chopped scallions- from top-dark green tops only
3/4 cup oil
2 teaspoons oil
5 eggs or Egg Beater equivalent
1 1/2 cups water
1 1/2 cups matzo meal
1 teaspoon salt
1/4 teaspoon black pepper

Directions:
Directions:
Cook (green and white) scallions in 2 teaspoons of oil until pale golden. Whisk eggs in bowl till well combined then add water. Stir in matzo meal, salt, pepper and scallion mixture.

Heat oil in skillet and work in batches. Cook pancakes until undersides are golden. Turn over with slotted spatula and cook until golden. Drain on paper towels. Replenish with additional oil as needed.

I always make these in advance and freeze them or refrigerate on layers of paper towels to absorb the oil. Reheat on baking sheet 350º for 10 minutes.
