1/2 c. red curry paste
1 stalk lemongrass
6 KAFFIR lime leaves, finely crushed

1 tsp. ginger root
1/4 c. chopped cilantro
1/4 c. lime juice
2 tbsp. fish sauce
1 tbsp. soy sauce

Simmer first 4 ingredients for 15 minutes, bring to room temp.
Add last 5 ingredients and cook on low heat for 30 min. Stir frequently.
