fresh pasta (cooked) shredded roughly
4 tomatoes
50gm black olive
25 gm sun dried toms in oil
2 tbs pine nuts
2 tbs grated parmesan
sweet basil for garnish

15 gm basil leaves
clove garlic
2 tbs parmesan
3 tbs extra virgin oil
2 tbs lemon juice


Make the vinaigrette -
process the basil garlic parmesan oil and lemon juice. Season.

cut tomato into wedges, pit and halve the olives. Slice the sundried toms.

Dry roast the pine nuts.

Combine everything, garnish with the basil and parmesan
