1/4 c. margarine
1/2 c. chopped onion
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel tomatoes
1/2 c. chicken broth
2 c. cooked chicken (diced or cubed)
12 corn tortillas, torn into bite sized pieces
2 c. shredded cheddar cheese

Preheat oven to 350º. Lightly mist 9x13 casserole dish with non-stick cooking spray or oil.

In large saucepan, saute the onion in margarine until tender, about 5 minutes. Add both soups, Rotel, chicken broth and cut-up chicken and stir until well blended.

Layer 1/3 of each tortillas, cooked mixture, and cheese. Repeat 3 times ending with the cheese on top. Bake 30-40 minutes uncovered until hot and bubbly. Remove and let stand 10 minutes before serving.

You can also add 1/2 cup diced green pepper if you like peppers. Saute along with the onion.
