6 large potatoes
1/4 c. sifted flour
1/4 c. grated parmesan cheese
3/4 tsp. salt
1/8 tsp. black pepper
1/3 c. butter
chopped parsley

Directions:
Directions:
Pare potatoes, cut into quarters lengthwise. Cover with ice water for 5 minutes and drain. Combine flour, cheese, salt and pepper in paper bag. Shake a few potatoes at a time in the bag to coat well with cheese/flour mixture. Melt butter in a 9x13x2 baking pan. Place potatoes in single layer in pan. Bake in 375º oven about 1 hour, turning once during baking. When golden brown, remove from oven, sprinkle with parsley and serve. Commercially grated cheese works best.

Note: I vary how I cut the potatoes. Sometimes I cut the potatoes on the round (1/4" to 1/2") thick - then score potatoes on top or cut into chunks or like steak fries, May peel or leave skins on.
