250 g bakers flour
1 g salt
30 g butter
110 mls milk (heated to approximately body temperature )
15 g fresh yeast
30 g caster (superfine) sugar
1 egg
200 g caster (superfine) sugar
ground cinnamon to taste

Directions:
Directions:
Sieve (sift) flour and salt into a bowl make a well in the center. Dissolve the yeast in the warm milk.

Melt the butter add it to the milk and yeast mix along with the 30 grams of sugar. Lightly beat the egg add it to the milk and pour the milk mixture into the flour. Mix the ingredients until a dough forms, turn out onto floured bench and work until smooth. Return dough to a bowl cover and allow dough to double in size.

Turn dough out onto a floured bench and knead it, before dividing it and shaping it into 8 even size balls. Place the doughnut on greased tray cover with a towel, leave in a warm place allow to double in size.

Deep fry at 325º F until golden brown. Mix the sugar and ground cinnamon in a bowl, roll the cooked doughnut in the sugar mix until coated and serve while warm.
