4 bacon rashes, chopped
8 sheets fillo pastry
100g butter, melted
12 medium eggs
2 medium egg tomatoes, sliced
3/4 c. grated cheddar cheese
2 tbsp finely chopped fresh chives
coarsely ground black pepper

Directions:
Directions:
Preheat oven to 200º. Grease a 12-hole (1/3 c. capacity) muffin pan.
Cook bacon in a heated pan for 5 min, or until brown and crisp; drain on paper towel.
Brush 1 sheet of fillo pasrty with butter, top with another sheet. Cut into 10cm squares. Place one square diagonally over another to give eight points. Press the prepared pasrty into muffin pan.
Repeat with the remaining pasrty sheets and butter. Break eggs into fillo cases, top with tomato, cheese and bacon, bake in hot oven, uncovered, for 15 minutes or until egg is cooked and cheese is melted.
Just before serving, sprinkle with chives and pepper. Delicious hot or cold
