Ingredients: 1/4 c. butter 1-1/2 c. sugar 2 eggs 2 or more tablespoons unsweetened cocoa powder 2 oz. red food coloring (this is a lot--make sure you buy two of the large, 1 oz. bottles to get the right amount--you can use less, it won't affect the flavor, but the color just won't be as intense) 1 tsp. vanilla 1 tsp. salt 1 c. buttermilk 2 c. flour 1-1/2 tsp. baking soda 1 tbsp. vinegar Vanilla frosting (enough for a two-layer cake)

Directions:Preheat oven to 350. Cream butter, sugar and eggs well. Make a paste of the cocoa and food coloring. Add to creamed mixture. Add salt and vanilla to buttermilk, add alternating with flour. Mix baking soda with vinegar and fold in last (do not beat after this). Bake in two large layers (for 30 mins.) or as cupcakes (for 20 mins.). Frost cake or cupcakes once cool. Recipe works as written. |

Notes: When I asked Isabel what favorite recipe she'd like to see included in the Wyoming cookbook, she picked this one. Red velvet cake is a very popular dessert in the South, and her Dad's from Tennessee--his mom used to make this for him for his birthday every year. Now Isabel's been requesting it too! Ironically, I got this recipe from my mom (who's not Southern) who somehow got it from a chef at the Waldorf Astoria right here in NYC.
