8 Tbsp. Butter (1 stick)
1 Cup Sugar
2 Eggs (beaten)
1 1/2 Cups Flour
1 Tsp. Baking Soda
1/2 Tsp. Salt
1 Cup Mashed Banana
1/2 Cup Sour Cream
1 Tsp. Vanilla
1/2 Cup Chopped Pecans (optional)

Directions:
Directions:
Preheat oven to 350º. Grease one 9 inch loaf pan. In a large bowl, cream butter with sugar until fluffy; add eggs and mix well. Whisk together flour, baking soda and salt; combine with butter mixture. Add bananas, sour cream and vanilla, stir well. Fold in nuts. Pour into pan and bake 1 hour. Cool in pan for 10 minutes and move to rack.
