1 bag dried peas, green or yellow
2 med. onions, chopped
6 c. chicken stock
salt & pepper to taste
2 bay leaves
season salt
leftover ham bone with ham bits, or smoked pork hock

Directions:
Directions:
Wash peas, discard black ones. Soak peas in twice as much water either overnight or on a low stove.

When water absorbed, add chicken stock and bring to boil. Froth will appear. Keep skimming off froth until boils clear. Add ham bone and ham bits, onion, bay leaves and salts & pepper. Gentle boil stirring peas often, add liquid if required. Remove bay leaves and bone when clean. Continue cooking until peas have fully cooked and pureed.
