4 boneless chicken breast
2 shallots
1 leek
3 T. butter
1/2 cup cider vinegar
1/2 cup maple syrup
1/4 tsp. ground nutmeg
1/2 cup dried cranberries
1/2 cup panko bread crumbs
1/3 cup slivered almonds
salt
pepper

Preheat 450º

Spray 2 qt. baking dish with spray, place chicken in dish and bake 20 minutes.
While chicken bakes, chop shallots coarsely; slice bulb and lower leaves of leeks finely.
Soften butter.Combine in small sauce pan; vinegar, syrup, nutmeg,shallots, and leeks. Bring to boil on medium high.
Reduce heat to medium low and cook 10 minutes or until liquid is thickened and reduced by half. Stir remaining ingredients into butter until blended for topping.
Pour hot maple topping over chicken, top with cranberry topping. And continue baking 5-10 more minutes.
