8 c. tomatoes, peeled and chopped (fleshy types like Romas are best)
1 c. chopped celery
1 c. chopped green pepper
1 c. chopped onion
2 cloves garlic, very finely chopped
3 Tbsp sugar
1/2 tsp cumin
1 Tbsp salt
2 tsp chili powder
1 tsp dried basil leaves
1 Tbsp white vinegar
2 canned jalapeņo peppers, chopped
1 pkg Ortega Taco seasoning

Mix all and bring to simmer. Simmer 20-30 minutes. Fill jars (pint or half pint) and process in boiling water bath for 20 minutes. Serve with your choice of chips (scoops are really good), on eggs, in casseroles. Works well to double this recipe. If you prefer a smooth salsa, puree all ingredients before cooking. If using a very juicy type of tomato, add an extra cup or so and drain some of the juices before cooking. Also good mixed with equal amount of Velveeta cheese and microwaved for a dip.
