1 - 3 1/2 to 4 lb. chicken
1 red pepper - cut into chunks
1 green pepper - cut into chunks
1 medium size Vidalia onion - cut into wedges
8 oz. mushrooms cut into fourths
To taste - salt, pepper, Dale's, Greek Seasoning, accent, rosemary, basil and minced garlic (in jar)

Put cocorico into sink and cover with water for 30 minutes. In the meantime, wash and dry chicken well. Put generous salt, pepper and Greek seasoning inside and out. Pat with Dale's on all sides and pour some into cavity, then put some rosemary into cavity. Let rest for a while. Heat oven to 475 degrees. Remove cocorico from water and put chicken over the cone. Put in heated oven for 20 minutes, turning once. While it is cooking, sprinkle vegetables with salt, pepper, Accent and basil. Remove cocorico from oven and turn oven down to 375 degrees. Spread vegetables around the bottom of the chicken, and sprinkle chicken with garlic and rosemary. Return corcorico with chicken and vegetables to the oven for 50 to 60 minutes. Baste the chicken and the vegetables about every 15 minutes and turn once or twice while cooking. Remove from the oven and let sit for 5 to 10 minutes while you scoop the vegetables and juice into a serving dish. Keep warm. Remove the chicken from the cone and cut into pieces with kitchen sheers. Serve with Country Brown Rice and the cooked vegetables.
