4 legs & 2 whole chicken breast, cut in half
4 cloves garlic, smashed
10 fresh bay leaves
2 l3mons, sliced plus juice of half a lemon, divided1 cup green olives
1 large onion
EVOO

Directions:
Directions:
To a roasting pan add:
chicken
garlic
bay leaves
lemon slices
olives
onion
Drizzle with EVOO salt & pepper.
Roast in 450º oven 30-35 minutes turning occasionally. Or until golden brown.

Gravy:

When chicken is almost done, melt 2 tbsp. butter in medium sized pot. Sprinkle 2 tbsp. flour over butter an cook 1 minute Whisk in 2 cups chicken broth and 8 sprigs of thyme. Cook until thick. Add a splash of lemon juice and serve over chicken and potatoes.
