3 apples cored and sliced,
2 large raw sweet potatoes, peeled and sliced,
1/2 c. brown sugar,
1/4 tsp. nutmeg,
1/2 tsp. cinnamon,
2/3 c. flaked coconut,
4 med. pork chops,
2/3 c. orange marmalade,

Directions:
Directions:
Place a layer of apple slices on bottom of buttered casserole, and cover with sliced sweet potatoes. Add another layer of apple slices and sprinkle with cinnamon, nutmeg, and sugar mixture. Salt lightly. Cover all this with 1/3 c. coconut, place chops on all this, salt again, and cover with marmalade. Bake covered at 350º for 1 hr., uncover and bake another 30 min.. Sprinkle remaining 1/3 c. coconut on top and place back in oven uncovered until coconut is lightly brown and crisp. ("You will find the moisture from the apples and juice from the pork is enough moisture for this delicious casserole")
