1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 Tbsp vegetable shortening
1/4 cup Mott's Cinnamon Applesauce
1/2 cup sugar
1/2 cup light brown sugar
1 egg or 1/4 cup egg substitute
1 tsp vanilla
1 1/3 cup rolled oats
1/2 cup raisins

Directions:
Directions:
1. Preheat oven to 375ºF. Lightly spray cookie sheet with cooking spray.
2. In a large bowl, mix flour, baking powder, baking soda and salt.
3. In a separate bowl, whisk together shortening, applesauce, sugar, brown sugar, egg and vanilla until shortening breaks into pea-sized pieces.
4. Add flour mixture to applesauce mixture. Mix well. Fold in oats and raisins.
5. Drop rounded teaspoonfuls onto cookie sheet 2 inches apart. Bake 10-12 minutes. Remove from oven and cool on cookie sheet for 5 minutes. Remove and place on cooling rack. Makes 3 dozen.
