2 T butter
1/2 c onion, chopped
1/2 c celery, chopped
1/2 c carrots, chopped
4 c mushrooms, sliced
1 1/2 c cooked barley
4 pkgs instant beef broth
1/8 ts pepper
4 c water
1 ts dried parsley flakes
2 cloves sliced garlic
1 T soy sauce
salt/pepper

Directions:
Directions:
In a medium sauce pan, melt butter over medium heat. Add onions, celery and carrots. Cook 10 minutes, stirring frequently.
Add remaining ingredients. Cover, reduce heat to low, and simmer 60 minutes or until vegetables are tender.
