3 tbsp. extra-virgin olive oil
1 cup diced onion
1 cup diced carrot
1 cup diced celery
1 tsp. minced garlic
2 T. white wine
1 gallon water plus 3 oz.'s chicken base or 1 gallon chicken stock or chicken broth
1 lb. boneless chicken breasts
2 T. chopped parsley
12 oz. cooked fettuccine, drained, in large pieces
Salt and freshly ground back pepper to taste

Directions:
In medium saucepan, heat oil and add onions, carrots and celery. Stir about 5 minutes, until onions are translucent. Add garlic and stir. Put in a stockpot or other large pot with white wine and chicken stock. Add the chicken breasts, bring soup to a boil and simmer until chicken is cooked through, about 5-10 minutes. Remove chicken from soup. When cool enough to handle, dice chicken and return it to soup. Add parsley and fettuccine; season to taste with salt and pepper.
