Solidified Brown Butter*

*Make the Solidified Brown Butter Recipe, but instead of pouring into a metal bowl, pour into a glass measuring cup. Let stand for about 15 minutes. The contents will separate into 3 layers. Brown flavor particles on the bottom, clarified butter in the middle and white whey on top. With a spoon, skim the whey from the surface and return it to another saucepan. Pour off ½ of the clarified butter into another container and refrigerate. Scrape the brown bits and remaining clarified butter into the saucepan. Return the heat to medium-low heat and whisk constantly until the mixture is a even dark brown. Scrape back into the glass cup. Let settle and pour off the clarified butter, leaving only the brown "nuggets", refrigerate in a sealed container until used.

The clarified butter can be used for sautéing and frying that would normally burn regular butter.
