1 stick unsalted butter, melted and cooled
1/2 cup milk (1 or 2%)
2 lg eggs, beaten lightly
1 1/2 c. all-purpose flour
3/4 c. sugar
2 tsp double acting baking powder
1 1/2 c. blueberries
1/2 c. All-BranŠ cereal
3/4 c. chopped walnuts (optional)

Preheat the oven to 425 degrees F.
In a small bowl, soak the All Bran in the milk. In another bowl, stir together the melted butter and eggs. In a large bowl whisk together the flour, sugar, baking powder, and salt. Add the Bran mixture to the butter/egg mixture and stir. Add all of this to the large bowl with the dry ingredients all at once. Stir until it is just combined. Fold in blueberries and walnuts. The batter should be thick and lumpy. Do not overstir or muffins will be tough. Divide batter among 12 well buttered 1/2 cup muffin tins and bake for 20-25 minutes until golden. Turn muffins out onto a wire rack to cool.
