1 1/2 pounds butternut or acorn squash
2 cups chicken broth
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/8 teaspoon pepper
Dash cinnamon
1 cup half-n-half or light cream

Directions:
Directions:
Using a steamer basket in large saucepan or Dutch oven - add broth, bring to boil and steam squash for approximately 25-30 minutes. Reserve liquid.

In food processor (or immersion blender) - blend squash till smooth using as much of the steaming broth as necessary. Return back to saucepan and stir in ginger, salt, pepper and cinnamon. Bring mixture to boiling. Reduce heat and stir in half-n-half.

Soup may be garnished with a dollop of sour cream and chives if desired.
