½ pound softened butter
1 cup superfine sugar
1 egg white
3/8 cup water
½ teaspoon salt
1 cup all-purpose flour*

Directions:
Directions:
Beat together butter and sugar with a wooden spoon. Stir in egg white, water, salt and flour. Line a baking sheet with non-stick tinfoil and coat lightly with oil. Form each cookie by plopping a heaping teaspoon of dough onto the foil and spread with a wet pastry brush, into a 3" circle. Bake at 325º F for 6 - 10 minutes, until golden brown, turn sheet halfway through. With a thin metal spatula quickly scrape the cookie off the foil and cool on rack. This will take some practice, the cookies will bunch up on the spatula. Wait 3 minutes and they will stick to the foil.
