1 slice bacon
1 tablespoon olive oil
3 tablespoons minced shallots
1/3 cup chicken broth
2 tablespoons white wine vinegar
2 tablespoons coarse grain mustard
1/2 teaspoon salt
1/4 teaspoon sugar
Pinch red pepper
2 pounds red potatoes-cut into 1 inch chunks -boiled till fork tender with 1 tablespoon salt

Directions:

Cook bacon in skillet until crisp-cool on paper towel-crumble-set aside.

Add oil and shallots to skillet cooking 1 ½-2 mins until lightly browned. Transfer into pyrex cup-whisk in chicken broth, vinegar, mustard, salt, sugar, and red pepper.

Microwave on HIGH for 1 minute. Pour over potatoes and toss gently. Garnish with bacon.
