1 1/2 lbs. of lean beef (sirloin)
Salt
flour (few tbsp)
6 tbsp. butter
1 lb. fresh mushrooms, sliced
1 medium onion, minced
1 tsp. paprika
1 c. beef bouillon (made with 3 bouillon cubes)
1/2 c. sour cream
1 pkg. egg noodles (cooked) or 1 recipe of rice pilaf

Cut across the grain of the beef into thin strips, with fat or gristle removed. Salt, dust with flour and saute in 4 tablespoons of butter.

At the same time, in another pan, saute in 2 tablespoons of butter, the sliced fresh mushrooms, one minced medium onion, and paprika. Add to meat mixture.

Add to the meat and mushrooms 1 cup of beef bouillon (made with 3 beef bouillon cubes) and simmer until the beef is tender.
Add sour cream. Serve over boiled noodles or rice pilaf.

This is an easy and delicious dish that can be made ahead of time and warmed up when your guests arrive. I found it in a Washington Post food column and have served it for over 45 years at dinner parties. All you need for an excellent dinner is a salad, rolls, and a light dessert.
