5 Tbsp. butter
2 onions (about 4 cups - thinly sliced)
2/3 c. red wine vinegar
1/2 c. applesauce
2 Tbsp. sugar
1 tsp. black pepper
1 bay leaf
1/8 tsp. ground cloves
2 lbs. red cabbage (cut into 1/2" wide strips)
1 large golden delicious apple (peeled, cored, and cut into thin slices)
1/2 c. apple juice

Directions:

Melt butter in large heavy pot over medium-low heat. Add onions, saute' till translucent (about 10 min.). Mix in next 7 ingredients. Add cabbage, cook until cabbage begins to wilt. Stirring often (about 5 min.). Cover and simmer until cabbage is crisp tender, stirring often (about 17 min.). Uncover, add apple and apple juice. Cook until apple is crisp tender, stirring often (about 5 min.). Remove bay leaf and serve.
