2 Tbl. vegetable oil
6 C. mixed vegetables in bite size pieces: such as carrots, cauliflower, green beans, zucchini, red & green peppers, broccoli, onions....
1 Tbl. curry powder
1 C. chicken broth
1 Tbl. corn starch
1/2 tsp. salt

Directions:
Directions:
In large skillet heat oil until hot. Add vegetables; stir-fry until tender, about 5 minutes. Stir in curry powder; stir-fry 30 seconds and then add combined chicken stock, cornstarch and salt. Simmer until sauce is thickened.
