Pie Crust:

3 C.of hazelnuts
8 dates (soaked first for 15 minutes)
5 T. honey
1 C. raw carob powder
Pinch of Salt
2 t. nutmeg
2 t. cinnamon

Carob Mousse Filling:

2 cups of soaked dates (remove pits after soaking)
1-2 T. vanilla extract
4 T. honey
1 T. olive oil or flax oil
3 avocados
1 cup carob powder
pinch of salt

Directions:
Directions:
First, soak 3-4 C.dates for at least 15 min

Pie Crust:
Grind up hazelnuts in food processor until almost powdery (may need a tablespoon or two of the date soak water to get it all going); next add 8 dates (soaked first for 15 minutes), 4 T. honey, 1 C. raw carob powder, pinch of salt, 2 t. nutmeg, 2 t. cinnamon
Blend all in food processor until doughy; form in to pie crust in pie dish and chill until mousse is prepared.

Carob Mousse Filling:
Blend up in food processor until creamy:
2 C. of soaked dates (pits removed), 1-2 T. of vanilla, 4 T. honey, 1 T. olive oil or flax oil, 3 avocados, 1 C. raw carob powder, and a pinch of salt
Blend all in food processor until "moussey" then spoon into pie crust, chill and serve.
